Wackie Day. Wackie Cake.

My day can be summed up with this – book fair, power surge and chocolate cake.  Here’s the explanation:

It’s All-Star Book Fair week at the kids’ elementary school.  I arrived about 8 a.m. to make final preparations.  On Monday every half hour starting at 8:30 until 2:30 students file through to make their wish lists.  The challenge is directing their attention to the books and away from the erasers that look like phones or chocolate bars and pencils that smell or write from both ends.

Conveniently, grandparent lunches are also scheduled during the week.  It’s the best sales strategy.   “Hey Grandma can you come eat lunch with me at school?  Hey Grandma, then we can go to the book fair and you can buy me a book!”

So, things are crazy anyway, but today the school lost electricity causing alarms to sound, doors to close and general chaos to ensue.  This was followed by several surges, which effectively knocked out the book fair cash registers for a time.  Of course, this all happened as the first group of grandparents entered the fair ready to spend.

To close the day, the kids and I made a quick trip home from school to grab dance class essentials, a run to the field, then to dance, then home for dinner, chores, homework and blog writing.  For some reason amidst all that I got a hankering for chocolate cake and found my mom’s recipe for Wackie Cake.   It’s a great way to end a marvelously mad Monday.

Wackie Cake  (Best made from scratch chocolate recipe! Easy & moist!)

3 c. flour

2 c. sugar

½ c. cocoa

2 tsp. salt

2 tsp. soda

Combine the ingredients above in a large mixing bowl.  Make three holes.  In one put 2/3 c. salad oil, in the second put 2 tsp. vanilla, and in the third put 2 tsp. vinegar. Pour 2 c. water over all and mix until smooth.

Back at 350 for 30 minutes in a greased and floured 9 x 13 pan.  Top with chocolate frosting.
