Tonight, as the crew chowed down dinner, my brother-in-law mentioned that a rep from a local ag business wanted to bring dinner Saturday night.  Many ag businesses will deliver lunch or dinner to harvest crews.  It is a great customer appreciation gesture, both to the farmer customers and the harvest chefs.  A night free from dinner duty?!  Sign me up!

Meal 7: Hobo Dinner, Dinner Rolls and Cherry Cream Cheese Dessert

Thank you to Megan for this simple, delicious all in one dinner.  On a piece of foil, place a hamburger patty.  Surround with sliced potatoes, sliced carrots and onions.  Sprinkle with salt and pepper.  Add 1 tablespoon of butter and seal foil wrapper.  Place on a cookie sheet and cook for 1 hour at 350 degrees.

Dinner Rolls (from Betty Crocker)

Cherry Cream Cheese Dessert (from Taste of Home)

This recipe provides instructions for individual dessert cups; however I used the same amounts and put everything into a 8 x 8 baking pan.  This does not set up like a cheesecake!  Serve with a spoon.

You can replace the cherry pie filling with another of your choice, and for a slight tasty twist, replace the lemon juice with lime juice.  Good stuff!

    We do those type of burgers in tinfoil over our fire in the summer while camping out back. They are so good!!

      I remember doing this too, as a kid, over a campfire. I think my mom called them po’ boys . . . maybe. Regardless, they got great reviews then and good reviews last night in the field. Thanks for reading and sharing!!
